Breakfast for Mother’s Day

I have to admit, I am not a huge breakfast person.  I think it mostly has to do with the fact that eggs are not my favorite.  They are great to cook with, but by themselves, not so much!  So, when I do have breakfast, you can pretty much guarantee it is either a French toast, pancake or waffle dish!

I created this French toast for a Philadelphia Cream Cheese contest (as you can tell by the picture!!), and it is an awesome recipe.  It incorporates bacon into a strawberry cream cheese stuffed French toast.  It is all you need for a delicious, filling breakfast…everything packed into one yummy dish.  And don’t let how easy it is to prepare deter you from serving it to Mom on Mother’s Day or at your next brunch.  It is so tasty no one will believe how easy it comes together.

Creamy Strawberry and Bacon Stuffed French Toast

3 big slices of bacon, halved width-wise
3 eggs
3 tablespoons milk
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
6 slices hearty bread, approximately 4” x 6” each
9 tablespoons Strawberry Cream Cheese, softened
2 – 3 tablespoons butter

Garnish: fresh strawberries, powdered sugar, maple syrup

Heat a large skillet over medium heat. Add in the bacon and cook until browned, approximately 3 minutes, flip slices over and continue to cook until browned and crisp, approximately another 2 – 3 minutes; drain; set aside.

In a large, shallow bowl beat the eggs; mix in the milk, nutmeg, cinnamon and salt to taste.

Lay three slices of bread onto work surface. Spread 3 tablespoons of the cream cheese onto each slice. Break up the bacon into bite-sized pieces and place on top of the cream cheese layer. Top each with a remaining slice of bread.

In a large skillet or griddle, melt butter over medium heat. Dip the sandwiches in the egg mixture for a few seconds on each side. Place in skillet and cook until golden brown, approximately 2 minutes, flip and cook second side until golden brown, approximately another 2 minutes.

Cut sandwiches in half, place onto serving platter, sprinkle with powdered sugar, garnish with fresh strawberries and serve with maple syrup on the side.
